on the home front: summer time meals



This recipe has become a classic family summertime recipe, so i thought i would share it on the quintessential summer holiday. I learned this little number in ecuador and it always hits the spot on a hot day.
pesto mayonnaise corn on the cob:
ingredients:

  • 1 cup basil-packed
  • 1/4 cup mayonnaise
  • 1 garlic clove- pressed
  • 1/2 cup parmesan cheese
  • 2 tablespoons pine nuts (optional)
  •  olive oil
  •  salt and pepper to taste
  • 2-4 corn on the cobs
directions:

  •  in a blender or food processor, blend basil, pine nuts, and garlic.
  • add mayonnaise and 1/4 cup cheese
  • if you are having trouble blending add a little olive oil
  •  add salt and pepper to taste
  •  place pesto in a bowl and set aside
  •  if you would like to grill corn a little boil corn for 2 minutes and then grill until brown
  •  if you don't like grilled corn- boil for an 4 minutes
  • when corn is done add pesto on top and sprinkle with remaining parmesan cheese
  •  eat- its messy but delicious!
I wasn't originally going to add this recipe but since we were eating it with the corn i'll add it for good measure: 
mozzarella bruschetta:
ingredients:

  • 1large tomato-slice
  • 1 ball fresh mozerella- sliced
  • 8 large basil leaves
  • delicious crusty italian or french bread ( we go with the freshest at the store)

directions:

  • grill tomatoes and bread on medium for a few minutes on each side
  • don't over flip the tomatoes or they will fall apart
  • when nicely grilled  layer toast, basil, cheese, tomato - this makes everything nicely heated
